Adjust oven rack to middle position and preheat oven to 400°F. Grease an 8-by-8-inch #baking dish{} with cooking spray. Place 1 TBSP @flour{1%cup} in a #large bowl{}. Wash and dry produce.

Place @butter{4%tbsp} in a #medium bowl{}; cover with plastic wrap. Microwave until melted ~{90%seconds}.

To bowl with melted butter, add @rolled oats{1%cup}, @pecans{½%cup}, half the @cinnamon{1%tsp}, remaining flour, @sugar{4%tbsp}, and a pinch of salt. Mix with a fork to combine. Place topping mixture in freezer to firm up while preparing filling.

Peel, core, and thinly slice @apple{3%pieces}. Zest and quarter @lemon{1%pieces}.

To bowl with reserved flour, add apples, @brown sugar{2%tbsp}, remaining cinnamon, and juice from one lemon wedge; toss to combine. Transfer to prepared baking dish in an even layer.

Remove topping mixture from freezer and evenly crumble over apple filling, pressing together with fingertips to create small clumps.

Bake on middle rack until topping is golden brown and apples are tender ~{25%minutes}.

While bake cooks, wash and dry bowl used for topping mixture. In bowl, whisk together @yogurt{¼%cup}, @creme fraiche{2%tbsp}, @honey{1%tbsp}, and lemon zest to taste until combined.

Let bake cool slightly. Divide between bowls and top with dollops of honey-lemon yogurt.
