    Preheat oven to 425°F. Wash and dry all produce. Slice potatoes into ½-inch-thick wedges. Halve, peel, and thinly slice onion . Halve, core, and thinly slice apple .

    Line a baking sheet with aluminum foil . Toss potatoes with a drizzle of cooking oil , fry seasoning , salt , and black pepper . Add bacon to the empty side of the sheet. Roast on the top rack until bacon is crispy and cooked through ⏱️ 15 minutes . Remove sheet and transfer bacon to a cutting board. Return sheet to top rack; roast until potatoes are browned and tender ⏱️ 10 minutes more.

    Meanwhile, heat a drizzle of cooking oil in a large pan over medium-high heat. Add onion and cook, stirring occasionally, until browned and softened ⏱️ 10 minutes . Add sugar and a splash of water . Cook, adding more water as necessary, until onion is caramelized and jammy ⏱️ 3 minutes more. Reduce heat to low and stir in half cheddar cheese until melted. Remove from heat; season with salt and black pepper .

    Layer half of sourdough bread with the cheesy caramelized onion, bacon, and a few apple slices. Top with Monterey Jack cheese and remaining cheddar cheese . Top with remaining sourdough bread to create sandwiches. Set aside.

    Melt butter in the pan used for onions over medium heat. Add sandwiches and push around until butter has absorbed. Cook until golden brown and cheese is slightly melted ⏱️ 5 minutes . Add another butter to pan, then flip sandwiches and push around again until butter has absorbed. Cook until golden brown and cheese melts ⏱️ 5 minutes more. TIP: It is OK if some cheese falls out; those crispy bits are a tasty snack. If you have a heavy-bottomed pan, place it on top of the sandwiches to help the cheese melt and bread crisp up.
