@potatoes{1%lb}
@bbq sauce{3%tbsp}
@fry seasoning{1%tsp}
@onion{1%unit}
@mayonnaise{3%tbsp}
@monterey jack cheese{2%slices}
@ground pork{1%lb}
@potato buns{2%unit}
@hot sauce{1%tsp}
@olive oil{2%tbsp}
@salt{½%tsp}
@black pepper{¼%tsp}
@butter{1%tbsp}

-- Step 1
Adjust oven rack to top position and preheat oven to 425 degrees. Wash and dry all produce. Halve, peel, and thinly slice onion; mince a few slices until you have 2 tbsp. Cut potatoes into 1/2-inch-thick wedges. Halve potato buns. In a #small bowl{}, combine mayonnaise with hot sauce to taste. Season with salt and black pepper; set aside.

-- Step 2
Melt butter in a #large skillet{} over medium heat. Add sliced onion and season with salt. Cook, stirring occasionally, until softened and lightly browned ~{10-15%minutes}. Lower heat and add a splash of water if onion begins to burn. Stir in half the bbq sauce (save the rest for serving); cook until sauce is warmed through ~{1-2%minutes}. Turn off heat; transfer to a #medium bowl{}. Wash out pan.

-- Step 3
While onion cooks, toss potatoes on a #baking sheet{} with a large drizzle of olive oil, salt, and black pepper. Roast on top rack until browned ~{20-25%minutes}.

-- Step 4
Meanwhile, in a #large bowl{}, combine ground pork, minced onion, fry seasoning, salt, and black pepper. Form into two patties, each slightly wider than a burger bun.

-- Step 5
Heat a drizzle of oil in pan used for onion over medium-high heat. Add patties and cook until browned and cooked through ~{4-7%minutes} per side. In the last 1-2 minutes of cooking, top each patty with monterey jack cheese; cover pan until cheese melts. Remove from pan and set aside. While patties cook, toast buns until golden.

-- Step 6
Spread bottom buns with remaining bbq sauce. Spread top buns with spicy aioli. Fill buns with patties and caramelized onion. Divide burgers between plates and serve with potato wedges on the side.
