    Adjust oven rack to top position and preheat oven to 425°F. Heat a medium pan over medium-high heat. Add bacon and cook, turning occasionally, until crispy ⏱️ 6 minutes . Transfer to a paper towel-lined plate. Wipe out pan.

    Wash and dry produce. Halve red grapes . Halve, core, and dice apple into bite-size pieces. In a medium bowl , combine grapes, apple, and apricot jam . Toss until fruit is coated and set aside until ready to serve.

    Place cream cheese in a small bowl and cover with plastic wrap. Microwave until softened ⏱️ 30 seconds . Whisk in brown sugar until smooth.

    In a wide shallow bowl , whisk eggs , half the milk , half the cinnamon , sugar , and a pinch of salt until well combined. Spread one side of each sourdough bread slice with the cream cheese mixture. Top half the slices with bacon. Close sandwiches with remaining slices, coated sides down.

    Heat cooking oil and 1 tbsp butter in the pan over medium heat. Dip sandwiches in egg mixture, gently flipping to coat. When butter foams, add sandwiches to pan, letting excess drip off.
