  • baby broccoli

  • cannellini beans
    1 can
  • chili flakes

  • ciabatta roll

    Preheat oven to 400 degrees. Halve grape tomatoes . Mince garlic . Halve lemon . Peel and thinly slice red onion . Chop oregano . Drain and rinse cannellini beans . Trim bottom inch off baby broccoli and discard.

    Toss baby broccoli with 1 tablespoon olive oil and season with salt and pepper . Spread on a baking sheet and roast until crisp-tender, tossing halfway through cooking. ⏱️ 12 minutes

    Meanwhile, heat remaining olive oil in a non-stick pan over medium heat. Add red onion and season with salt and pepper. Cook ⏱️ 5 minutes , until softened.

    Add grape tomatoes and cook ⏱️ 5 minutes , until they start to burst. Set aside.

    Add cannellini beans to the pan with oregano, garlic, and a pinch of chili flakes . Cook ⏱️ 2 minutes , until fragrant.

    Halve ciabatta roll lengthwise and toast it in the oven ⏱️ 4 minutes , until crispy.

    Top ciabatta with tomato, onion, and cannellini bean mixture. Sprinkle with crumbled goat cheese . Serve with roasted baby broccoli to the side with a squeeze of lemon.
