    Adjust rack to top position and preheat oven to 425°F. Wash and dry all produce.

    Heat a drizzle of olive oil in a large pan over medium-high heat. Add bacon and red onion ; cook, stirring occasionally, until bacon begins to crisp and onion begins to soften ⏱️ 4 minutes .

    Meanwhile, place flatbreads directly on top rack of oven and toast until golden ⏱️ 5 minutes .

    To pan with bacon and onion, add dates , 2 tsp rosemary , and ⅓ cup water . Season with black pepper . (If pan seems dry, add another drizzle of olive oil.) Cook until dates are tender and liquid reduces ⏱️ 3 minutes .

    In a small bowl , combine ricotta cheese , garlic powder , and zest from half the lemon . Spread mixture over warm flatbreads. Top with caramelized bacon mixture, sprinkle with feta cheese , and drizzle with olive oil.

    In a large bowl , whisk together balsamic vinegar , a large drizzle of olive oil, and ⅛ tsp sugar until sugar has dissolved. Toss with mixed greens and pistachios . Season with salt and pepper.

    Squeeze juice from remaining lemon wedges over flatbreads; sprinkle with remaining lemon zest and as much remaining rosemary as you like. Serve immediately alongside salad.
