Wash and dry all produce. Halve, peel, and dice half the red onion into 1⁄4-inch pieces; thinly slice remaining onion. Zest and quarter lime. Core, deseed, and dice bell pepper into 1⁄4-inch pieces. Dice sweet potato into 1⁄4-inch pieces.

In a small #microwave-safe bowl{}, combine sliced onion, 1⁄2 tsp sugar, juice from three lime wedges, and a pinch of salt. Cover with plastic wrap and microwave for ~{30%seconds}. Refrigerate until ready to serve, stirring occasionally.

Heat a drizzle of olive oil in a #large skillet{} over medium-high heat. Add ground turkey and cook, breaking up meat into pieces, until slightly browned ~{2%minutes}.

Reduce heat to medium. Stir in diced onion, bell pepper, sweet potato, mirepoix paste, fry seasoning, 1 cup water, a large drizzle of oil, and as much chili powder as you like. Cover and cook until veggies are softened and turkey is cooked through ~{6%minutes}. Uncover and continue to cook, stirring occasionally, until all but a thin layer of liquid has evaporated from pan ~{5%minutes} more.

Meanwhile, in a second small bowl, combine lime zest, sour cream, and juice from one lime wedge. If necessary, add water 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt and black pepper.

Once most of the liquid in pan has evaporated, reduce heat to medium low. Evenly top turkey mixture with mozzarella cheese. Cover and cook until cheese melts ~{1%minute}. Remove from heat.

Top skillet with lime crema and pickled onion (draining first). Serve family style directly from skillet.
