Preheat oven to 450 degrees and position rack to the top. Heat a #large pan{} over medium-high heat. Add bacon and cook, turning occasionally, until crispy ~{8%minutes}. Transfer to a #paper towel{}-lined plate and discard excess fat. Wipe out pan.

Meanwhile, halve and thinly slice tomato into half-moons. Halve, peel, and thinly slice shallot. Peel and mince garlic. In a #small bowl{}, combine tomato, shallot, garlic, balsamic vinegar, ¼ tsp sugar, and a pinch of italian seasoning. Set aside to marinate ~{10%minutes}.

Pat chicken cutlets dry and place between plastic wrap. Pound with a meat mallet to an even ½ inch thickness. Season with remaining italian seasoning, salt, and black pepper. Heat a drizzle of cooking oil in the cleaned pan over medium-high heat. Cook chicken until browned and cooked through ~{4%minutes} per side.

While chicken rests, place flatbreads on a #baking sheet{}. Toast in the oven, flipping halfway, until golden ~{3%minutes}. Transfer to a cutting board and halve crosswise. In a second #small bowl{}, combine basil paste and mayonnaise to make the basil mayo.

Strain the balsamic marinade from the tomato salad into two #small bowls{}. Stir 1 tsp olive oil into each bowl. Spread the flatbread halves with the basil mayo. Layer with crispy bacon, cooked chicken, and as much marinated tomato salad as desired. Close sandwiches and halve crosswise.

Divide any remaining tomato salad between serving bowls. Plate the sandwiches and serve with the balsamic oil dipper on the side.
