    Mince or grate the garlic . Thinly slice the sun-dried tomatoes . Cut the chicken breasts into ½-inch strips and season with salt and pepper .

    Heat ½ tablespoon olive oil in a large pan over medium heat. Add the chicken and cook, tossing ⏱️ 5 minutes , until golden brown and cooked through. Set aside.

    Heat a pot of water to a boil with a pinch of salt. Add the penne pasta and cook ⏱️ 9 minutes until al dente. Reserve some pasta water, then drain.

    Meanwhile, heat another ½ tablespoon olive oil in the same pan over medium heat. Add the garlic and ¼ teaspoon chili flakes and cook ⏱️ 30 seconds until fragrant. Add the diced tomatoes and sun-dried tomatoes and simmer ⏱️ 4 minutes .

    Stir in sour cream and spinach . Cook ⏱️ 2 minutes until spinach wilts. If sauce is too thick, add a splash of reserved pasta water. Season with salt and pepper.

    Add drained pasta and cooked chicken to the pan. Toss to coat and heat through ⏱️ 1 minute .
