Preheat oven to 450°F. Wash and dry produce. Dice @tomato{1%unit} into ½-inch pieces. Trim and thinly slice @button mushrooms{8%oz}. Halve, peel, and thinly slice @shallot{1%unit}. Peel and grate @garlic{2%cloves}. Cook @italian chicken sausage mix{1%unit} according to package directions, then slice.

In a #large bowl{}, combine tomato, a drizzle of @olive oil{1%tbsp}, @italian seasoning{½%tsp}, @salt{1%pinch}, and @black pepper{1%pinch}. Set aside to marinate.

Place @flatbreads{2%pieces} on a #baking sheet{}; toast until lightly browned ~{5%minutes}.

While flatbreads toast, heat a drizzle of @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add mushrooms and shallot; season with ¼ tsp salt and pepper. Cook, stirring frequently, until lightly browned and softened ~{5%minutes}. Stir in @sugar{½%tsp} and a splash of water. Cook, stirring, until caramelized and jammy ~{1%minute}. Turn off heat; transfer to bowl with tomato and toss to combine. Wipe out pan.

Melt 1 tbsp @butter{1%tbsp} in same pan over medium-high heat. Add garlic and @flour{1%tbsp}. Cook, whisking constantly, until lightly browned and fragrant ~{30%seconds}. Reduce heat to medium low; whisk in @cream cheese{2%oz} and ½ cup water until melted and combined. Add 1 tsp italian seasoning; season generously with salt and pepper. Bring to a simmer; cook, stirring occasionally, until thickened ~{1%minute}. Remove from heat.

Heat broiler to high. Evenly top flatbreads with white sauce and veggies. Sprinkle with @mozzarella cheese{2%oz} and crumble @goat cheese{1%oz} over top.

Broil flatbreads until cheese melts ~{1%minute}. Watch carefully to avoid burning. Slice flatbreads into pieces. Divide between plates and serve.
