Preheat grill to high or oven to 400 degrees. Pick leaves from @sage{1½%tsp}; discard stems. Mince leaves. Peel @shallot{1%unit}, then grate into a medium bowl.

Add @ground turkey{1%lb}, sage, @dried thyme{½%tsp}, and @panko breadcrumbs{¼%cup} to bowl with shallot. Season with @salt{½%tsp} and @black pepper{¼%tsp}. Mix with hands until just combined, then form into two patties slightly wider than the buns.

Heat @olive oil{1%tbsp} in a large pan over medium-high heat. Add turkey patties and cook until no longer pink in center, ~{5%minutes} to ~{6%minutes} per side. If grilling, grill patties on cleaned and oiled grates over direct heat.

Meanwhile, stir together @mayonnaise{2%tbsp} and @cranberry jam{1%tbsp} in a small bowl. Season with salt and pepper. Split @potato buns{2%unit} and place in oven until golden, ~{3%minutes} to ~{5%minutes}. If grilling, toast buns on grill over indirect heat.

Toss together @mixed greens{4%cups}, @dried cranberries{¼%cup}, @pecans{¼%cup}, @balsamic vinegar{1%tbsp}, and a drizzle of olive oil in a large bowl. Season with salt and pepper.

Spread cranberry mayo on buns. Fill each with a turkey patty and a small handful of salad. Serve with remaining salad on the side.
